Hi Adam
There's something close to this in DCP-o-matic (!!) which is coming around
the corner (slowly). It should be much more flexible in matrixing input
audio to the outputs.

It might be good to grey out or not draw the input channels that are not available.
With this it can also be possible to do matrix-decoding from 2-channel sources.
